Prom


Summer and a few of her other sophomore friends got to go to Tanque Verde's prom. You know our Lulu, any chance she has to play princess for a day, even now, she's going to jump on it.

We stopped by so her adopted Aunt Julie and Uncle Tony could see her all dressed up. Bonus that Uncle Mikey was there too!

The Week In The Life of the HaggisFam

Paige, who attended U of A's Bear Down Camp (think Fish Camp) as a camper last year, will be returning next year as a counselor. They competed in the FCC's Dodgeball Tournament and won 3rd place!

The mornings are getting hotter and Shelby couldn't wait for me to get her leash off before hopping in for a swim, so she drug it around behind her.












Easter Traditions

Easter this year was a quiet affair. We had a deep family discussion about the Resurrection and shared Easter dinner with our good friends. Not many pictures were taken, but I did remember to catch some of our annual traditions.

The sunrise over the Rincons on Easter morning was spectacular



Dennis and his brothers used to make a bunny cake every year for Easter. It's a tradition that we have continued with our girls, and one I hope they will continue with their own children one day



I always have to make my Nanny's fruit salad and then try and stop myself from eating it all before dinner!

Since there were so few of us this year, I opted to only make my Great Great Aunt Selma's lemon meringue pie instead of making both that and her coconut cream pie. One or both of those pies has been on my Easter table for as long as I can remember.

Menu Plan Monday



Breakfast
Kodiak Cake Frozen Waffles with Strawberries and Whipped Cream

I could not resist these when I saw them at Sam's Club. The vanilla and cinnamon ones taste like a waffle cone! When we run out of strawberries, I plan on cutting up a pineapple and topping the waffles with that and some coconut milk whipped cream!

Lunch
Turkey and cheese on a whole grain wrap with spinach and pickles, broccoli, strawberries and blueberries, hard boiled egg, almonds, and Reese's peanut butter cup cookies

Afternoon Snack
Blueberries and almonds

Dinner
Petite sirloins, baked potatoes, and spinach salad with blueberries, pecans, and goat cheese
Mustard-Dill Pork Chops, Leftover Potatoes, and Asparagus
Chicken Stir Fry with Broccoli and Carrots over Cauliflower Rice
Carne Asada and Bell Pepper Lettuce Wraps with Jicama and Guacamole
Slow Cooker Beef Ragout over Spaghetti Squash
Shrimp Scampi
Leftovers or Takeout

Ice Cream

Shakeology
Peaches and Cream
